Christmas Brunch for a Large Gathering
| Laura Jones
Christmas will be upon us before we know it. Ahhh!
If you’ll be having grandparents or other relatives staying with you for the holidays, or even just having family over for Christmas brunch, it’s nice to have a simple breakfast ready to go. This way you can open gifts and then have a Christmas brunch.
After the chaos of gift opening, while the family is relaxing and the kids are occupied with video games and toys, you can sneak off to work on the holiday dinner to follow.
Or maybe this is one of those lucky years that you don’t have to do it all yourself. After all, your sister-in-law needs to host now and then!
Either way, plan that Christmas morning breakfast ahead. Here is a cheesy egg casserole that I took to a Teacher’s Appreciation breakfast last year. The teachers raved about how good it was, and I almost broke down and told them that it is also incredibly simple!
You can prep everything ahead of time and pop it in the oven when you are ready for it Christmas morning (or other days that you need to feed a lot of people!). It does have dairy and eggs, so if anyone has allergies you may need something else to pair it with.

Have a great weekend everyone!
