Quick Weeknight Meals

Quick weeknight meals are always an important part of our family menus during hockey season! I don’t know about you, but I’m tired this week! But that doesn’t take away the importance of eating right. Taking off a few pounds is something that I always keep top-of-mind, so I try to make substitutions for healthy living both simple and delicious.

One thing I have found is cauliflower rice. I really try to cut carbs, especially when getting home late after practice or a game. Making cauliflower rice after a hectic day of running around? Way too many steps!

Then I realized it’s available in bags, made and ready! I first saw it at Whole Foods then noticed it at my local grocery store as well. So if the family is having rice with a Chinese dish or with fish or poultry, I recommend substituting rice with cauliflower rice.

My trainer, Aubrey Miller gave me this great idea! I’ve also snuck this in on my kids and they have not even noticed it is cauliflower instead of rice! It all starts at home, and this is a clever way to make a meal healthier without raising any eyebrows. I’ll reveal my secret to them at some point, but for now, I’ll take what I can get away with!

Beef and Broccoli with Brown Rice or Cauliflower Rice
